Turkish seekh kebab | Turkish seekh kebab, often called Adana Kebab, is a mixture of finely minced lamb (or beef/lamb blend) and tail fat, seasoned simply with salt, paprika, and sometimes cumin and Urfa pepper flakes. The mixture is shaped onto wide, flat metal skewers and grilled over charcoal until juicy and slightly charred. It's traditionally served with flatbread and a sumac-onion salad.
